This deliciously awesome low carb pancake recipe comes courtesy of my dedicated client Trisha Dugan. Let her know your thoughts on the recipe after you try it out!
Ingredients
3 Egg whites
3 Tbsp Coconut Flour
1/2 cup Plain, Unsweetened Almond Milk
1/4 tsp Vanilla Extract
Stevia and cinnamon to taste
Directions
Combine all ingredients, mix thoroughly with a fork or a hand mixer until free of lumps. Fry up like you would any pancake, about a minute per side, using either a bit of cooking spray or coconut oil. Top with berries and a bit of healthy raw honey (if not going for 100% low carb) for a delicious, healthy breakfast.
**This is a low carb breakfast due to the fact that the coconut flour is practically devoid of carbs and is almost entirely fiber.
