Ingredients
6 egg whites
pinch cream of tartar
1 3/4 cups rolled oats
1/2 cup granular Splenda
1 teaspoon vanilla extract
1 teaspoon maple extract (optional)
1/2 teaspoon almond extract (optional)
1/2 cup natural apple sauce
4 scoops vanilla protein powder
1 teaspoon nut or grapeseed oil (adds marginal fat per cookie)
1/2 cup raisins
Directions
Preheat oven to 325 F.
Beat egg whites with cream of tartar to soft peaks. Slowly add the Splenda and all extracts until combined. Separately, combine apple sauce with oil, add raisins to this mixture, then slowly incorporate the oats with protein powder into it. Once combined, fold in the egg whites so all ingredients are evenly distributed.
Spray a baking sheet with Pam, and spoon batter onto the sheet, making 12 cookies. Bake at 325 degrees for 17 – 20 minutes.
Each cookie contains 15g of protein and 15g of carbs.
