Fiberful Tuna Melt Wraps

The perfect snack or lunch for those of us following a balanced nutrition plan.

Ingredients

2 Mission Carb Balance Medium Tortillas
1 can Tuna, drained
1/3 cup diced celery
2 tablespoons pickle relish
1/4 cup fat free mayonnaise
1 teaspoon lemon juice
1/2 cup low fat sharp Cheddar cheese, grated

Directions

Pre-heat oven on broil to 350 F.

Meanwhile, combine the tuna, celery, relish, mayonnaise, and lemon juice. Divide the mixture evenly between two tortillas, placing it straight down the center of each tortilla, and topping with the grated cheese.

Broil the tortillas (or microwave, in a pinch), opened, until the cheese melts, about 2 minutes. Once cooked, roll the tortillas and serve the melts.

Makes 2 servings.

    Ohhh these are yummy! I never tried with the wrap before, but I make my own wrap:

    1 egg
    2-4 tbsp. flax
    1/2 tbsp. EVOO

    either (1) cook like a crepe and use it as a wrap, or (2)spread flat on a plate and microwave on high

    Looks good but I can’t seem to get the lo-carb wraps here. I know that recipe Christine, but I can’t seem to make it with ease, have to stand over them while they are cooking. I was exhausted the last time after just making 4.
